Today, I’m giving the beloved Banana Split a fresh spin—Iron Chef style. This nostalgic treat is just the thing for a hot summer day: cold, creamy, and a little bit celebratory.
The banana split dates back to 1904, when a young soda jerk named David Strickler at Tassel Pharmacy in Latrobe, Pennsylvania, sliced a banana down the middle and nestled in scoops of vanilla, strawberry, and chocolate ice cream. He finished it with syrup, nuts, whipped cream, and the now-iconic cherry on top. The sweet invention quickly became a sensation—and to this day, Latrobe celebrates its legacy with an annual Banana Split Festival.
In my version, I’ve added a twist that might come as a surprise: a drizzle of honey balsamic glaze. Instead of the usual caramel or hot fudge, this tangy-sweet addition cuts through the richness and brings much more interest to every bite. It’s unexpected, balanced, and seriously delicious.

Honey-Balsamic Banana Split

INGREDIENTS
Serves 2-3

INSTRUCTIONS
Slice both bananas lengthwise. In an oval banana split dish or a bowl of your choice, place both halves of one banana, cut side facing up. Add 3 to 4 scoops of softened gelato and ¼ cup of sliced strawberries.
Top with 2 tablespoons chopped pecans, a few maraschino cherries, 2 tablespoons chocolate chips, marshmallows, and 1 to 2 tablespoons of honey balsamic glaze.
Place the remaining banana halves on top, cut side facing up. Add one more scoop of gelato, then top with the remaining strawberries, pecans, and chocolate chips. Finish with another tablespoon or so of honey balsamic glaze and serve.
Pro Tips
Before scooping, dip your ice cream scoop into a cup of very hot water and let it sit for 10 to 15 seconds. This helps the scoop glide through the ice cream more easily and gives you smooth, perfectly rounded scoops every time.
Don’t be afraid to mix things up! Try different gelato flavors—like chocolate or salted caramel—or play with toppings. Walnuts, pistachios, and even blackberries are a few of my personal favorites.
